I love Ireland – the people, the country, Guinness – for baking and caramels, not necessarily drinking :).

When I was at university in Liverpool, studying Geology, I went on a few field trips, from Connemara to Donegal, eventually spending 6 weeks in Glenties for my thesis. Everything from the warmth of the people to the landscape made me want to move there and I tried when I graduated. Alas, but I have hope that someday, I’ll be back.

Until then, here are a few recipes I’ve made in honor of a country I love, and their St Patrick!
