Top Ten (10) Pancake Recipes

We’re a pancake loving family. We don’t go a week without them. Sometimes, a day.

This Shrove Tuesday, I’m sharing some of our favourites:

Fact: Did you know the Dutch NEVER eat pancake for breakfast?*

*rolling my eyes, shaking my head*. However not? Well, that’s them. And lovers of The Netherlands or not, we have ours round the clock. With maple syrup, chocolate sauce, sugar, however.

*As a rule 🙂

1. Red Velvet Pancake Mini-Muffins

For dinner, I whipped up these Red Velvet Pancake Puffs, baked in mini muffin tins, all thanks to The Pioneer Woman. Since I discovered them a couple of weeks ago, I’ve made them 5 or 6 times. They rock. Our favourite version has chocolate chips in the mix. To serve? Chocolate sauce.

2. Chocolate Pancakes

All you have to do is add some cocoa powder and/or melted chocolate to a batch of pancake mix and cook

3. Plain Pancakes with sugar and lemon

Plain pancakes, sprinkled with granulated sugar and squeezes of fresh lemon juice over the top. Yum

4. Cheese and Tomato Pancakes

Go savoury with this cheddar cheese pancakes – so delicious. Put some mix in a pan, stud with slices of cheese and tomato and some finely chopped fresh basil if available. Flip over and let the other side cook. It’ll be a touch light but the best bits are when the cheese part toasts and part melts – I love the contrast in textures.

5. Bacon pancakes

Another family favourite. Add chopped bits of cooked bacon to batter and cook as desired

6. Tea Drop Scones

Flavoured with blended/ brewed tea, especially the flavoured varieties, these are cute mini pancakes that one could eat by the dozen.

7. Pancake Buffet

Make a variety of mini pancakes – plain, chocolate, chocolate orange, blueberry, etc and serve buffet style with a variety of fruit, yogurt, sauce, jams, etc

8. Peanut Butter and Coconut Pancakes

Melt 3 – 4 tablespoons of peanut butter with coconut milk. Add this to your pancake mix, with a sprinkling of desiccated coconut. Fry by the tablespoon in coconut oil. Serve with lime wedges

9. Pancake Fondue

Chunky bananas, apples, pofferttjes – Dutch pancakes dipped into warm chocolate sauce? What’s not to love.

10. Carrot Pancakes

Add finely grated carrots to your regular mix, with chopped cilantro and crushed, toasted cumin seeds. Serve with an herby dip or syrup :). As you wish.

  1. I can’t say I have a favourite. Pancake to me has always been plain, only made more interesting by toppings, sauces, etc.
    I’m trying out new pancake recipes though, so this post has given me new ideas. Best one I’ve done so far? I made big pancakes, then stir fried chopped fresh tomatoes, pepper, spring onions, chicken bits, franks and a little cabbage. Oh, I added a little ketchup too (that is me, being adventurous, LOL!) Then I rolled the stir fry into the pancakes, shawarma style. It was quite interesting!
