Favoured Oils with Ginger, Garlic, Turmeric & Onion
Talk about two in one: spiced oil and crisp/ crunch ‘chips’.
Flavoured oils can be made in a variety of way – infusing spices/ citrus in oils; cooking oils with other ingredients – fresh or dried, and a myriad of ways. This recipe combines fresh ingredients- ginger, garlic, turmeric and onions with salt and oil to create a condiment that is delicious with rice, on dips, over salads and more.
To do this, I chopped up some red onions, ginger, garlic, fresh turmeric – roughly a cup. Then I heated up twice the amount of vegetable oil in a deep pan. You could use coconut, rice-bran, peanut, sunflower and other oils.
Once the oil was hot, I added the chopped onions and co, seasoned with a pinch of salt. You have to stir continuously so the bits don’t burn. If you cook on too high a heat, you’ll end up with burned bits which you don’t need or want. This can take5 – 10 minutes till the additions are golden brown.
Remove from the heat and let cook.
Once cool, put mixture into an air-tight container and store in a cool safe place.
Use as you will and enjoy the nutty, caramel, spiced flavour and texture. I like to use both oil and bits – drizzled over eggs and in rice/ noodles, crunchy bits to top.
