Use spinach, kale or other greens for a similar result

Herbed Mango Salad

One of my favourite recipes with salad. Combine sliced mangoes with a simple scent leaf sauce and you’re in heaven.

Recipes for Mango salads – simple and with nuts

Garden Egg Salad

A perfect way to serve up garden eggs and okwu-oji, but deconstructed.

Tapioca & Coconut Salad

Creamy, coconutty, filling, this salad is perfect for Good Friday. Topped with flaked fish – smoked mackerel (homesmoked if you like).

Green Pawpaw Salad

A gorgeous salad made with unripe pawpaws. Popular in Thailand, this could definitely become a Nigerian favourite.

Don’t want to make a green one? Then rustle up this ripe Pawpaw salsa.

Olive Salad

This quick and easy salad with olives is a great accompaniment to fish dishes.

  1. Lovely Yummilicious. My fav is the Herbed Mango. The thought of mango sweetness + a burst of flavor from the herbs is getting me quite excited. Well done.
