Did You Know? On Storing Bread

I can’t count the number of times I’ve begged family and friends not to keep bread in the fridge. I can tell you that the resistance I’ve faced is something else.

I don’t know when I learnt about bread and the best storage mechanism.

Did you know that bread is best stored at room temperature?

Did you know that the next storage method for consideration after room temperature is the deep freezer? Yes, frozen bread restircts the growth of mold which lengthens the ‘shelf life’ – up to 3 months.

Did you know that storing bread in a refrigerator encourages bread to go stale quickly.

One day in the refrigerator is equivalent to three days at room temperature.

  1. Oh Ms. KB you know this! I fight with my family members too all the time. Well, a silent fight. I always quietly take the bread right out of the fridge when I see it there. I mean why? Coupled with the fact that in Nigeria power is not steady. You’ll now come and put bread in hot fridge. Mtchew. I didn’t know the science of it, just knew it was wrong. And I don’t like cold or frozen bread. So…keep it on the counter please. Lool sorry for the rant. My first time commenting. I love love your writing. You’re like a poet and a cook all rolled into one. And maybe a food explorer, scientist, adventurer, researcher. Lool. I am a fan. Well done

  2. So good to get those tips from you KB. I did hear about the fridge being bad for bread but not with these details. We always learn something new!

  3. In NL, we use the bread bin. Given that bread is a staple and you can buy a half or full loaf, the bread in the bin lasts maybe a couple of days. Since I don’t like to go to the supermarket every day, I store extra loaves in the freezer. I was told it could last a month. Three months huh? Learnt something new. I typically bring out the frozen bread and let it thaw at room temperature or use my toaster to speed things up.

  4. A good friend told me this about this about 20 times in 2012 when we were sharing an apartment. It took him about 3 months to convince me. Then i tried telling my family and It took me about 6 months to convince them. Now we cant eat bread that has been stored in the fridge.
