Swiss Bircher Muesli & other Thanksgiving Breakfast Ideas
I’m just me. I don’t have an Aunt Betty, so I can’t present you with her famous cranberry cobbler…neither do I have an Uncle Bert or Joe, to wow you with his beer-basted, flame grilled whole turkey, ready in just under X hours! Welcome to my world…and my thoughts for Thanksgiving.
My plan is to share some of my favourite quick and easy recipes, especially for large crowds! See, I’m an MOT (Mother of three) so even a reguar meal at home is like a bash. Plus I work full-time, so I love snap, snap, on the table-type dishes.
My hope is that these recipes will be short, sweet and easy to make but with the wow factor of and the hope of rainbows everyday! And if all else fails…please remember I’m not American….just a mom of 2 kids at an American school…….:-) !
Let’s start with Brekkie….for I like a good one. Have you ever wanted silk or cashmere on your morning table? If your answer is yes, then you’ve come to the right address. Swiss Bircher Muesli. One man – Dr Maximilian Oskar Bircher-Benner (1867-1939),one vision – organic/wholefoods = birth of a great revolution! I love it. How do I count three ways? One – for its simplicity to prepare; Two – for its flexibility to eat; and Three – tastes damn good! Forget that the Swiss have it for dinner:-). A bit like the Dutch who never have pancakes for breakfast!
So here’s how to go about it.
Make your own cereal – gluten-rich or gluten-free – and surely you don’t need 10 reasons why you should make your own cereal (other than its dead easy, cheaper, tastes better, you can put what you like – 100 pecans and 2 raisins, you can leave out what you don’t want, you never run out…if you’re smart, no-added sugar, no-added salt and goes perfectly in homemade Swiss Bircher. And for Granolas)
Once you have the cereal, put some in a bowl. I generally measure out 1/2 – 1/4 cup per person but it all depends on how much you eat. Top up with milk to cover the cereal and stir in 2-3 tablespoons of yoghurt (plain or vanilla works well for me) for every 1/2 a cup. To be honest, this is a recipe that is totally personal so use these comments purely as a guide. Some people enjoy it with apple juice and other water so….the choice is yours.
Cover and leave for a few hours or overnight in the refigerator, till the grains have absorbed the milk and yoghurt and the consistency is loose, fluid and silky…on the tongue!
When you’re ready to eat, grate or chop apples and stir into the cereal mix
Add other fruits if you like…
If the mixture is too thick,….thin it with some milk or apple juice. If it is not too thick…enjoy it.
