The Princess and the Pinecone – Camping Tips for Beginners

And despite my university camping trips to the Cordillera Cantábrica, I’ll have to describe myself as a greenhorn when it comes to camping. I wasn’t going to put a lot of trust in my teenage experiences,  fueled by youth and confidence – university students and mothers sit in two different camps, not to mention separated by years and a steady decline in outdoor adventure. The Ozoz then and now are worlds apart, especially when it calls for putting up a tent!

We just got back from a few days away in London.

I especially wanted to attend a one-day seminar being organised for ‘Women in Energy’ in London plus we had public holidays in the Netherlands so we all trooped over. The seminar was all about taking your ambitions to the next level.

So, Thursday afternoon, I left my man with his our kids and headed to Piccadilly.

Sweet Potatoes: My Bajan Cooking Class

‘Guilty as charged, Your Honour.’

‘What is the charge, accused?’

‘Well, Your Honour, it was 4 weeks ago when I promised the defendants some recipes from a now-distant trip to Barbados’.

‘And why have you kept them waiting so long?’

‘Well, Your Honour, since then

1) The pain in my right, writing hand has come back aka RSI (see I work almost 8 hours a day on the computer at work + X hours at home!)

2) I have begun a period of ‘study’ for the next 6 months with assignments due every fortnight

3) I’ve decided to also grow my ‘dessert-making skills’ and have been trying and testing various recipes, which I will share soon

4) Plus  I’ve returned to TV watching. On this note, I ask the defendants to forgive me. Life may never return to normal but I promise to keep them updated and find out how they’ve been doing too.’

Turning to the defendants, the judge asks

‘Do you forgive the accused?

The defendants respond ‘Lets see what she has on offer first, then we’ll decide.’

So here begins this tale of three dishes, made in under an hour and arguably the best of Barbados food sampler I had, but I will start at the very beginning.

We’ve ticked the box: Cologne Christmas Market, done!

I’m not one to turn down great offers, be it sushi or plums.

So when a friend asked if I wanted to go with her and her kids to a Christmas market, I said yes! For many reasons including the top one – I’d never been to a German Christmas market before.

On Copenhagen…

There is so much going on….it is unbelievable. Christmas has happened upon me…again this year. The only difference is that last year I dreamt of going to a Christmas market in Germany (and didn’t) and this year, tomorrow infact, we’re off to Cologne! And this year, there were only hopes…no dreams. I’m so excited. but that’s another blog post.

Just some photos of my weekend, last weekend, which I spent visiting a friend of mine in Copenhagen. I had a GREAT TIME! Hopefully, these will tide you over till Sunday when I get back. I hope my computer isn’t misbehaving then. Tonight, I actually thought I would have to borrow a computer to write the famous ‘the anatomy of a dead computer aka ‘crashed  ’cause ours was acting up. Thankfully, that’s not to be the case.

Ask me what I think about Copenhagen and here are a few things I have to say. But I see in part….and tis not the whole:-). Here it goes:

Umami…the 5th taste, Selfridges and more on Baker Street

IMG_1672As soon as I stepped off the bus, heading for the FBC, the first thing to ‘appear’ right in front of me was Selfridges….and not just any section but the FOOD HALL of Selfridges. I put it on my to-do-list, which I was making up as I went along. Then I made a promise to myself to return – which I did.

Bad Bentheim, Episode 2: More fun in Germany
