Tigernut Coffee Latte

by on February 5, 2016

I think I might be developing serious lactose intolerance…sigh. Old age? Who knows.

That’s not the reason I made this though. This was a beautiful coming together of gifts of Ethiopian coffee beans and green cardamom pods in a spice box from friends.

It doesn’t require much thinking.

I combined 3 cups of water, 1 cup of fresh tigernuts (soaked overnight), 8 cardamom pods, 4 dates and a heaped teaspoon of coffee beans.

Then I blended the life out of the mix till the beans were nibs. Best done in a high-powered blender.

Then the real work began – straining and sieving. Here I employed a fine mesh sieve and cheese cloth, repeating.

The result, on ice was amazing.

Cool, rich, refreshing, creamy, nutty, stop me somebody. Everyone, from children to adult loved it. And yes, I let my children drink coffee on occassion, not after 2pm on any day though.

I have this on rinse and repeat btw. And the chaff? The fibre left over? Dont throw it away! Add to crumbles and granola, and pancakes, cakes and more. Ideas coming soon.[wpurp-searchable-recipe]Tigernut Coffee Latte – – – [/wpurp-searchable-recipe]
