I love discovering chili and herb sauces and this Ecuadorian sauce, Aji Criollo is no exception.

Serve with plantain chips, pies, rice, basically every and anything. Thank me later.

A delightful bright sauce of chili and herbs - a riff on a version which is an Ecudorian essential, made with cilantro and/or parsley.

Ingredients
  1. 1 cup scent leaves
  2. 1/4 cup cilantro
  3. 1 spring onion, roughly chopped
  4. 1 - 2 green chili peppers, to taste
  5. 1 - 2 garlic cloves, chopped
  6. Juice of 1 lime
  7. 1 tablespoon vegetable oil
  8. 1 teaspoon distilled white vinegar
  9. Salt, to taste
Instructions
  1. Combine all the ingredients in a food processor or blender
  2. Add ½ cup of water and pulse until the ingredients are chopped
  3. You should get a loose consistency
Notes
  1. Use cilantro and parsley instead of the scent leaves
  2. You could use apple cider vinegar or any other gentle tasting vinegar instead of the distilled white
  3. Take it up, down, away by stirring into Mayo
  4. Sautee vegetables or stir into poached chicken. I'm going to stop now
