Garden Egg Bake with Cheese & Sugo

And on and on and on – Part 2 of the Baked Garri-crusted Garden Eggs.

It involves a bake.

Ideally, I would have like this to feature the baked garden eggs, a spicy sauce and Wara, locally produced cheese.

Well, though I didn’t meet the ultimate test in my head, the end result was pretty awesome. So, I couldn’t find Wara but the Mozzarella I used created a luscious dish.

This is the Nigerian version of the Italian Eggplant Parmigiana (Eggplant Parmesan), using Nigerian Garden Eggs to create a three-component layered dish with Baked garden eggs, Sugo (tomato sauce) and Mozzarella Cheese.

I quite enjoyed it -rich, creamy and filling.

Tips

To prevent your dish from being soggy, salt the garden eggs to get rid of the excess water – see Step 1.

Don’t overdo it with the oil – garden eggs soak up liquids

Baked Garden Egg

Ingredients

1 portion Baked Garden Eggs/ Egg plant
2 (or more) cups Sugo, to taste
200g Mozzarella Cheese, sliced thickly
Mix of Garri, Parmesan, Red Chili flakes, left over from Baked Garden Eggs/ Egg plant
Step 1

Prepare the Baked Garden Egg rounds

Step 2 – Layer the dish

In a casserole dish, spread 1/2 cup of the sugo.

In a single layer, place half of the baked garden egg rounds over the sauce.

Follow with the cheese and about 3/4 cup of the sauce.

Rinse & repeat, (My new favourite phrase) till you’ve used up all the ingredients.

I formed 2 layers and finished with sauce before topping with what was left over from the garri-parmesan mix.

Step 3 – Bake

Bake in the centre of the oven at 180 degrees C uncovered for about half an hour  – the sprinkled topping and the edges should be golden-brown.

Remove from the oven and let rest for at least 10 minutes.

Serve. With a green salad if you like. I had mine with quick-pickled cucumbers (salt, sugar, chili flakes) and lettuce.

It freezes and reheats beautifully.

I like to freeze mine in ‘individual/ dinner portions. Reheating can be done in the microwave or in the oven.
